Stuffed Calamari Recipe

 

Ingredients:

6-8 Get whole cleaned squids (get them from a nice fish store)

4-6 Hot sausage links (remove from casings)

1- Banana Pepper (long sweet Italian green pepper also called Cubenello) Finely chopped

8-10 Saltines

Olive Oil

3 cloves of Garlic (Crushed no chopped)

1- Jar of RAO’s Arrabiata sauce (Spicy marinara sauce)

Fresh Cracked Pepper.

Box of Toothpicks

Frying Pan

Oven safe Dish (like a baking pan or casserole dish)

 

* I added Rock shrimp to the stuffing this time..

 

Brown sausage in frying pan on medium heat, use spatula to crumble sausage into marble size chunks. Do not overcook the sausage, just trying to brown it.

 

In a large Mixing bowl add saltines, crush up saltines, add Olive Oil (just drizzle in the oil until the saltines start to bunch up) add Browned Sausage and finely chopped pepper, add a some fresh Cracked Pepper.

 

stuff the calamari tube with the stuffing mix, you can really jam it in there, I packed them real tight. Once you have them REALLY stuffed then close the front with two or three toothpicks.

 

In a frying pan heat Olive oil over medium heat, lightly sear the garlic Do not over cook the garlic, just soften it up. Add Stuffed Calamari sear on all sides for a about 2 minutes a side, this step is not to cook them just browning the outside. Move entire contents of frying pan into a baking dish, add RAO Arrabiata sauce, put enough to just cover them 3/4 of the way, Cook in oven at 325-350 for about 45 minutes. You can leave them in the oven on warm for a long time after they are cooked. You can serve with some steamed broccli-rabe or pasta.
